THE ANCIENT MILL MOLINO BENINI WAS FOUNDED IN 1926, A HISTORIC SITE IN SANTO STEFANO, A COUNTRY TOWN IN THE IMMEDIATE NEIGHBORHOOD OF RAVENNA. MOLINO BENINI, STRONG OF A TRADITION THAT HAS BEEN GOING ON FOR SEVERAL YEARS, HAS ALWAYS STOOD OUT FOR THE QUALITY OF ITS FLOURS, USING ONLY ROMAGNA WHEAT THAT IS GROUND WITH A PROCEDURE CALLED "SLOW GRINDING" IN ORDER TO PRESERVE THE NATURAL QUALITIES OF THE CEREAL TO THE MAXIM
